Abstract: | Development of healthy beverages for the elderly from krachai juice mixed with passion fruit juice for the elderly consumers was studied. The best formula is the ratio of krachai juice to passion fruit juice and fructo-oligosaccharides was 40:40:20. The Physical and Chemical properties, such as pH was 3.50, the total acid content was 0.13% (as citric acid), the color was L*, a*, b* were 35.9, 3.4, and 27.6, respectively. The sensory test was done by subjects aged 45 years and over showed a mean overall liking score of 8.37. |
