Abstract: | This research aimed to develop a universal model for predicting water activity (aw), moisture content (MC), and total soluble solids (TSS) in various dried fruits and vegetables using a portable near-infrared (NIR) spectrometer. Spectra of nineteen types of dried fruits and vegetables were measured in the wavelength range of 305-1140 nm in interactance mode. Partial least squares regression was used for model development. The results showed that the prediction models for aw and MC were moderately accurate with the coefficient of determination (R2), standard error of prediction (SEP), and the ratio of the standard error of performance to standard deviation (RPD) of 0.80, 0.09, 2.23 and 0.83, 2.93%, 2.44, respectively. However, the result of TSS model showed lower performance with the R2 of 0.70, high SEP of 5.64 °Brix, and RPD of 1.82. These results indicated that the obtained aw and MC models can be used as rapid measurements in different dried fruits and vegetables, while the TSS prediction model needs further improvement. |
